My lunch was very crabby today! As was I this morning….

I leave for my first work trip tomorrow. I’ll be going to Massachusetts for two days, and returning to DC on Friday night. Then on Tuesday I fly back out and do not return for 10 DAYS. Over a week. I knew that this was going to be how things were when I started my new job, but I can’t help but feel a huge mix of emotions. To be honest, right now I’m feeling anxious and dreading it. I have trouble with change. I like the routine that William and I have developed. I like coming home to him every night, making dinner together and just relaxing and going to bed early. The thought of being by myself for 10 days is pretty scary. I know everything will be okay, and I’m sure I’m just being my usual very over dramatic self. I just cant shake this bad feeling in the pit of my stomach.

I really want to try and make the best of my trips though. I know that I won’t be doing this job forever and I know I need to enjoy the experience as much as possible. I am going to try to be as positive and optimistic as possible! And because there is some quote out there that says happy girls are the prettiest girls. And I think that is so true.

Happyyyy eeee!

The dread got the best of me, and this morning I woke up in a very foul mood. Since William has class tonight, I suggested we have lunch together. Neither of us knew what we wanted to eat, so I checked my food truck list. It was a gorgeous day today, so we decided to make the 4 minute drive into DC and walk to one of the food trucks. William picked a burrito and I finally got to experience one of the food trucks I’ve been wanting to try for AGES! (like seriously I check their tweets every single day.)

Seafood is definitely my favorite and I’ve been dying to try their crab sandwich. They describe it as more of a crab “roll” similar to the style of a lobster roll.

It did not disappoint. It contained huge chunks of crab meat in a light mayo and old bay mix. I’m telling you this thing was ALL crab. It was absolutely perfect and filled me up without putting me into a post lunch coma. Fantastic! We sat outside in the sunshine and enjoyed our lunches and it was a much needed pick me up from my funky mood. Thanks Wills!

Now I am just getting things done around the apartment so I can spend some time with my boyfran before I leave tomorrow. Also, I’m heading home to visit my fam bam and pick up THE RUG!!! Fingers crossed that it turned out okay….

How do you beat a case of the mondays- particularly a cold, rainy Monday? Homemade pasta and pumpkin ale, of course!

When William suggested making our own pasta today after seeing how easy the process was on an episode of diner, drive-ins, and dives this weekend, I enthusiastically agreed! The weather today was absolutely BLAH. Somehow the lovely fall weather has gone missing and an ugly winter day came in its place. Weren’t we just sweating in the 90’s last weekend? Oh that’s right. We were. We stopped by the grocery store and as we gathered supplies we spotted some blue moon pumpkin ale. We picked up a 6 pack.

*Hiding my nails because I desperately need a manicure.. Eck!

Of course being the control freak I am, I wanted to find a recipe to follow. W took my phone and didn’t allow it! He said we needed to just go with it and experiment. He wins….this time. We mixed a couple handfuls of flour, 3 egg yolks about 6 regular eggs. I should mention we made FAR too much so this mixture should’ve been reduced big time. We mixed this into a big ball of “dough”

We are obviously children and if you put flour in front of us, we will throw it at eachothers face.

We also made some meatballs to go with our pasta. We mixed ground beef with some Italian breadcrumbs, an agg, and some grated parmesan cheese.

We rolled out the dough using a canned good since we don’t own a pasta maker. Or even a rolling pin. Hey, it’s about improvising, right!? And William cut noodles out of the dough.

He then took over. Don’t hate, my man can cook! He boiled the noodles and heated up a can of traditional marinara sauce (and added some light cream to it.) My smile could not have been any bigger when he presented me with my plate.

Homemade noodles, creamy tomato sauce, meatballs and garlic bread. Oh my! 😀

Will made a perfect dinner and it was so delicious…I hope we start making our own fresh noodles more often. You can absolutely taste the difference. Now time to go enjoy another pumpkin ale and watch the Monday Night Football game! Can’t believe I leave for my first work trip in 2 days. Very nervous :-/

Hello there!
I have been terrible about updating my bloggie, and I know my many readers are getting antsy. (Hi Will, Mom, Dad, Maggie, and Jenny!) I am planning on updating much more frequently and promise to get better at it. It’s a work in progress after all!
Last week was a bit crazy…W and I were kind of all over the place, as were our meals. On Wednesday we went out to happy hour and had a few adult beverages (shock top is my new favorite beer of life.) We have a restaurant close to our apartment that has $1 beers every wednesday. I can’t get enough of a good deal!

I’ve been wanting to try shepard’s pie for a while now, and when I mentioned it to Will, he said his mom makes an amazing shep’s pie! Something about delicious buttery mashed potatoes atop veggies and meat sounds perfect to me. Will’s mom very generously offered to make us a batch for me to try! (Sidenote: I adore Will’s mom. We are very close and she is amazing!)

The shepard’s pie did NOT disappoint! It was so yummy and I can’t wait to have it again in the future and try to recreate hers. Thanks Mrs. D!!! (We had it with garlic buttered ciabatta bread.)

It’s no hidden secret that I love sweets. Cake, brownies, cookies, chocolate, cheesecake, and especially FROYO. (Strangely enough, I only really eat real ice cream on top of things a la mode style. Froyo however, should belong in my diet all day, every day.) So after the shep’s pie we made our way over to FroZenYo for some of the delicious creamy good stuff. I had the red velvet flavor at another location a while back and it was by far my favorite flavor I’ve tried. They didn’t have it at our location however…….until Thursday night.

I filled my cup all the way to the tippy top and it enjoyed it with some chocolate chips, rainbow sprinkles, and a hefty dose of hot fudge. Heaven in a cup.

Friday night, William wasn’t in the mood for a big dinner. He had drill all weekend and didn’t want to go to bed with a heavy stomach. I used this as my excuse to make one of my most favorite foods (that he hates!) Scallops!

I removed the excess water from them and seasoned them with salt, pepper, and garlic powder. I simply sauteed them in butter and some chopped garlic. They came out nicely browned and very tasty!

This weekend was a very chill one for me. I went to bed early, watched a lot of TV, went home and went to church with my family Sunday. I did however take on a new project that I’m very excited about on Saturday! Pinterest is a new website where you can share, pin, and “repin” pictures of inspiration. There are several categories such as food & drink, home decor, fashion, ect. Lately I’ve been looking for a new rug for our apartment because I absolutely detest the one we have now. It is all wrong for us and just gives the whole room an icky vibe. But rugs are so darn expensive!! Every one that I like is well over $300! No thank you!! As I was browsing rugs on pinterest,  I found some inspiration that I knew I had to take advantage of! I decided I was going to PAINT MY OWN RUG!!! Sounds weird right? Well, it is. And it takes a lot of work. Like 5+ hours of taping alone. Yeah.

My baby sister and I ventured to ikea and purchased a white rug as my blank canvas, and I got to work taping. I’m not going to reveal the final product now because frankly I don’t know what it is! [I completed the project at my parents house because it required more room than my apartment would allow, so it is still there drying.] I’ll give you these pictures as a teaser:

That’s it with the beginning rows of tape on it…Stay tuned for the final product!!!!

Also: Christmas in Ikea?? It was only October 1st! Not gonna lie though, it gets me really excited for the holiday season. (Thanks Jen for being my model)
